Cauliflower Ceviche
Cauliflower Ceviche straight from the garden

Ingredients:
From the Garden:
3 cups diced cauliflower (about 1 small head) stems and florets not core
2 medium tomatoes, chopped
½ small red onion, diced
1 jalapeño, seeds removed and diced
6 tablespoons lime juice (about 3-4 small limes)
2 avocados, diced
½ cup cilantro, chopped
From the Kitchen:
½ teaspoon salt, or to taste
1 teaspoon, honey (can use sugar or agave syrup)
Instructions:
Whisk the lime juice, honey, salt, and black pepper together in a large bowl.
Add the cauliflower, tomatoes, onion, and cilantro to the large bowl with the lime juice and stir to combine and coat well.
Let marinate for at least 1 hour but overnight is best.
Add avocados before serving.
Additional salt to taste if desired.
Ceviche is a style more than a recipe. Feel free to add hotter peppers or none at all. Some tomato juice adds a dimension. Diced cucumbers are a great addition. Substituting mango for the tomato is also great . Blanching the cauliflower prior to marinating will give a softer less crunchy result.
